Apple or pear cake


This tasty apple cake is dairy and egg free and pears can be used instead of apples.


1 1/2 cups full cream coconut milk

2 tsp apple cider vinegar

1 cup and 2 tbs raw sugar

1/3 cup and 2 tbsp olive oil

1 tbsp vanilla extract

2 apples or pears

1/2 cup raisins or sultanas

2 cups flour

3 tbs cornflour

3/4 tsp baking soda

1 tsp baking powder

1 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp all spice

3/4 tsp salt


Preheat oven to 180 degrees. Grease and line with baking paper a 20cm deep round baking tin.

Whisk together coconut milk and apple cider vinegar and let rest for five minutes. Peel and dice two apples. Add the sugar, olive oil and vanilla to the coconut milk and cider vinegar until the mixture becomes frothy.

Add the apple and raisins to the bowl. Then fold in sifted flour, cornflour, baking soda, baking powder, cinnamon, nutmeg, all spice and salt.

Try not to overmix the cake.

Pour the mixture into the cake tin and bake for 45-50 minutes or until a skewer comes out clean.

Let the cake cool for a couple of minutes in the tin and then turn onto a wire rack to cool before turning onto a serving plate.

Sprinkle with icing sugar on the top.
