Kumara and carrot soup

This hearty vegetable soup is perfect for a warm winter's meal - or any time of year for that matter!



Ingredients:

4 tbsp oil

2 garlic cloves

2 medium onions

2 tsps cumin and coriander

1 tsp paprika

500gms of carrots

600gms of kumara

2L vege stock

Juice of 2 lemons or limes



Instructions:

Heat the oil and saute the onions. Then add garlic and the spices and cook for about a minute. Next add the rest of the ingredients and cook until the vegetables are soft. Lastly, mash or whizz the soup until smooth. Serve with warm crusty bread.
